Wanda Servé used to run a bar and teach philosophy. Then she started cooking — and didn’t stop.

Based in Nice, she moves between natural wine bars and residencies across the south of France — Fanfan & Loulou, Hôtel Amour, and wherever else she lands next. Her cooking is relaxed, curious, and borrows from wherever it wants to: sharing plates that slide between crudo, phở and tacos without asking permission.
