Mat Rucki - Chef in Residence at Freddy, Zurich

Mat Rucki is a chef for whom cooking has always been a natural rhythm of life - a language shaped by curiosity, attention, and deep respect for what lies beneath the surface of each ingredient.
From June 17th to 20th, he will join Freddy in Zurich as a guest chef in residence, presenting a series of dinners built around seasonality, locality, and connection. This residency invites guests to experience food not as a fixed form, but as a living dialogue - between product and technique, simplicity and depth, instinct and structure. The menu created for this occasion will also feature dishes inspired by seasonal Polish cuisine, interpreted through his contemporary and intuitive approach.
His cooking is grounded in farm-to-table philosophy - not as a concept, but as a daily practice. He works closely with seasonal produce, allowing ingredients to lead the narrative. Each menu is composed as a cohesive story, often drawing on subtle fusion influences to create dishes that feel both unexpected and deeply familiar.
Based in Warsaw, Mat currently works as a freelance chef, designing menus, consulting, and creating curated dining experiences. He entered the gastronomic world several years ago, leaving behind a career in the IT industry to fully dedicate himself to cooking. Since then, he has been developing his craft across Warsaw’s dynamic culinary scene, continuously refining his perspective through hands-on experience and collaboration.
Beyond technique, he values presence above all - the awareness, care, and intention behind each plate. For him, food is not separate from life, but an extension of how he sees the world - honest, attentive, and grounded in connection.
This residency at Freddy becomes a moment of exchange - a meeting point of places, people, and perspectives, where each dish turns into a quiet, shared experience.
